
Fall Festivities just would not be complete without this sweet Fall Treat!
Apples are awesome for health and fat loss. The trick is making it supportive when you want to add something fun like caramel!
Fit Yummy Mummy Heidi was searching for a healthy way to make this treat and came across the NourishingMeals.com site.
She found the following recipe and tweaked it to make it even more supportive and delicious – even has a fun way to store this caramel dip that her kids LOVE and think is as delicious as ice cream!
Homemade Raw Caramel Apple Dip
1 cup raw cashews
1 cup medjool dates, pitted (about 8 to 10 dates)
1/4 cup organic Agave (or less, to taste)
2 teaspoons vanilla
pinch sea salt
To make RAW – place the cashews into a small bowl and cover with water. Let soak at room temperature for about 2 to 3 hours.
Place the pitted dates into a separate small bowl and cover with water. Let soak for about 2 to 3 hours. Drain and Rinse nuts and dates (save the date water)
Place cashews into a blender along with the dates, agave, vanilla and salt. Add about 6 to 8 tablespoons of the date soaking water and blend. Blend until smooth, scrape down the sides as needed. Scoop out into small bowls and serve with fresh sliced Fall Apples.
Heidi’s Storage and Bonus Snack Tip
“For a fun way to store it (because it makes a LOT!), I freeze it in ice cube trays and plunk one or two out for my kids as a Treat. My son thinks it’s ice cream and after eating his broccoli, who am I to burst his bubble? He shovels them in his mouth, saying ‘I Love you my mommy’.”

Made this, thought it was pretty good…then I added some fresh grated nutmeg. Wow. My children have now proclaimed this the BEST fruit dip ever. I have to agree. Yum!
