Coconut Quinoa Breakfast
1/2 cup cooked quinoa – I love RED quinoa
1-1/2 small banana – mashed
3-4 dried apricots, chopped (I used apricot preserves)
1 tsp shredded coconut, unsweetened
Mash banana, add apricots. Stir into quinoa and Enjoy!

Quinoa is something I have been wanting to try. I dislike the texture of shredded coconut… so I’ll have mine w/a few almonds instead.
I do use coconut oil & coconut water (as a base for my smoothies sometimes) but I just can’t eat the coconut!
